Chef Dylan's Story
Dylan is a skilled artisan cortador in New England, specializing in the art of hand-carving and presenting premium Jamon with precision and elegance. Dedicating 17 years to the restaurant industry, he began his journey as a dishwasher at just 15 years old and working his way up to the role of executive chef. His time as Executive Chef at Barcelona Wine Bar was especially life-changing, igniting his deep passion for Spanish cuisine and its rich culinary traditions.
Transformative Spain
His journeys to Spain, including visits to renowned Jamon producers like Monte Nevado in Segovia, deepened his appreciation for Jamon and the intricate artistry behind its production. Immersing himself in the traditions of the producers and Cortadors of the region, he developed a profound respect for their craft. Inspired by this experience, he returned to New England with a vision to share his passion, leading to the creation of Cortador & Company.
